Jessie’s Recipe Corner: Cinnamon corn bread

In this cold chilly weather, you need something cozy and comforting to nourish your tummy. I have the perfect thing that you can make in your kitchen. This simple recipe will become your go-to treat to accompany those cold winter nights.
What you’ll need:

  • 1 cup of all-purpose flour
  • ¼ a cup of sugar
  • 4 teaspoons of baking powder
  • ¾ teaspoon of salt
  • 1 cup of yellow cornmeal
  • 2 eggs
  • 1 cup of milk
  • A stick of butter
  • 1 – 2 teaspoons of cinnamon (depending on how      sweet you want it)
  • A 9x9x2 pan (or something equivalent)
  • A mixer, bowl and spatula

Stir together: flour, sugar, baking powder, salt, cinnamon, with the cornmeal. Add in the eggs, milk and melted butter. Beat with mixer until smooth, and pour the mixture into greased pan. Bake in the oven at 425 degrees for 20 – 25 minutes. Slice into squares and serve to your family and friends as a delectable treat that will leave you feeling all warm inside. Enjoy!
