Jessie’s Recipe Corner: Chicken soup for the student’s soul

It is the season of spring colds, flus, allergies and whatever kind of sickness you can think of during this last month of school. Well, I have a wonderful recipe from my mother that will set you back on track and get you ready for the finals ahead!

 

You will need:

–        A medium pot

–        Half a box or bag of pasta, preferably egg noodles

–        One Chicken breast or 2 thighs (diced or chucked)

–        Water enough to fill 2/3 pot (1/2 cup to steam vegetables in the beginning)

–        ½ an onion

–        1 stalk of celery (diced)

–        1 carrot (peeled; sliced or diced)

–        1 potato (diced; with or without the peel)

–        2 cloves of garlic (peeled; diced or smashed)

–        1 teaspoon of salt

–        ½ teaspoon of pepper

–        2 tablespoons of olive oil

–        1 bay leaf (optional)

–        1 teaspoon of thyme (optional)

 

Directions:

Pour the olive oil in the base of the pot on the stove and add onion, celery and garlic and sauté together. When the onion starts to become soft add carrot and potato, stir together. Then add ½ a cup of water and put the lid over it and let sit for five minutes. Then add the chicken and spices, stir together. Then fill 2/3 of the pot with water, give a quick stir and cover it. Once it has reached a boil, reduce the heat to a simmer until the chicken and potatoes are cooked through and add the pasta. Stir every 5 minutes. Serve, breathe in the medicinal goodness and enjoy!
